Seffa - Sweet Cinnamon-Couscous With Dry Fruits

Ingredients:
4 spoons butter
2 finely minced shallots
1/4 1 chicken broth
6 saffron threads, squeezed
200 g couscous
2 spoons sugar
1 spoon orange-bloom-water
cinnamon
2 spoons raisins
4 dates
6 dry apricot-halves
2 spoons finely sliced almonds
salt and freshly ground black pepper |

Soak the apricot-halves about 20 min in warm water, drain, and cut cube-shaped. Soak raisins about 10 min in warm water. Remove stones from dates and mince finely. Heat 2 spoons of butter in a pot and roast shallots shortly in it, quench with the broth. Ad the saffron and the remaining butter. Mix in the couscous (as described in the package, finish short before) and let it swell 5 min. Fill it in a bowl and loosen up with a fork. Mix into it sugar, orange-bloom-water, cinnamon, raisins, dates, apricots and the sliced almonds. Season with salt and pepper.
